Since 2020, the Michelin Guide has had a new distinction: the Green Star. It completes the list of distinctions already awarded (Stars, Bib Gourmand, Michelin Plate) to reward the best culinary experiences. Who is it intended for? How is it obtained? What does she offer in return? The tourist office has done its research and will explain it to you.

What is the Michelin Green Star?

Named on green clover through the shape of its logo, this annual distinction highlights restaurants that put local produce on their plates while anchoring themselves in a sustainable and eco-responsible approach.

On French territory, 94 restaurants are distinguished by this green macaron and this number continues to grow.

In Normandy, 3 gourmet restaurants were awarded the Green Star: 2 in Seine-Maritime and 1 in Manche.

Who can get the Michelin Green Star?

This recognition is reserved for chefs who engage in innovative initiatives in favor of sustainable gastronomy, whether these are practices, know-how and respect for ethical standards.

What are the criteria ?

  • Appear in the Michelin Guide or be a gourmet restaurant
  • Use local and seasonal products (supply from local producers and know their farming methods, respect seasonality or cultivate your own fruit and vegetable garden at the foot of your establishment, use permaculture, etc.)
  • Eliminate plastic and non-recyclable materials from the supply chain as much as possible
  • Ensuring proper management of food waste (fight against waste and use composting)
  • Demonstrate a low ecological footprint (offer meat-free menus, provide takeaway containers for leftover meals, encourage short supply chains, etc.)
  • Treatment and recycling of general waste
  • Promote the well-being of teams

The 3 other distinctions from the Michelin Guide:

  • Stars for refined cuisine
  • the Bib gourmand for careful cuisine at a moderate price
  • the Michelin Plate for good and simple meals

Nature and environment: the values ​​defended by the Green Star

Preserving the environment is becoming a major issue in all areas and a source of concern for consumers. Aware of new customer expectations, Michelin inspectors therefore decided to to highlight the ecological commitments linked to restoration and to create this new distinction.

This award also serves to raise customer awareness of the establishment's sustainable approach, for example by transparently mentioning the names of producers on its menu. This enthusiasm for putting nature in its rightful place can go further, such as getting involved in educational projects on the subject and contributing to the local economy as well as promoting energy autonomy.
